Dr. Dawg, who serves “Chicago fast food with an herbal twist,” opens a place to eat in Wauwatosa

Dr. Dawg of Glendale, who serves “Chicago-style prepared food with an herbal touch,” opens a moment quo in Wauwatosa.

An opening is scheduled for September 1, Chicago-born managing spouse Brooke Thomson.

The place to eat will be at the former Cousins Subs at 853 N. Mayfair Road. Cousins moved to a self-contained dining spot at 725 N.Mayfair Road with full driving service, according to their Facebook page, and reopened on July 2.

“Before the pandemic, we were already running to get this stain,” Thomson said. “We’re looking to grow up.”

Thomson, the proximity of the Milwaukee County Research Park, the Milwaukee County Zoo and several hospitals made it the ideal place for Dr. Dawg.

Dr. Dawg’s hot dogs menu, Italian beef sandwiches, burgers, poultry sandwiches, sausages, burgers and vegetarian sausages, hand-cut fries, a coleslaw salad and desserts.

“These are all the things I enjoyed developing in Chicago, Italian beef,” Thomson said.

The place to eat uses all-natural and premium flat Angus beef and completely natural cage-free chicken, according to its website.

“There are no antibiotics or expansion hormones,” Thomson said. “Everything is herbal and the maximum things are frozen.”

When Thomson moved from Chicago to Milwaukee with her husband, Brian, 23 years ago, she said she “couldn’t use Italian meat to save” her life.

Years later, she “delighted” when someone I knew told her about Dr. Dawg and hired her.

“There’s nothing better, ” said Thomson. “It’s what I know and everything I love.”

In 2009, David Ross, who grew up in Chicago, founded Dr. Dawg as a Chicago-style food cart in Manitowoc. He opened Dr. Dawg’s Glendale, 6969 N.Port Washington Road, with his business partners Alfred and Andrew Teo in 2010.

Dr. Dawg had a location in Greenfield from 2013 to 2015.

After years with the company, Thomson took over as the company’s managing spouse after Ross moved to Florida in 2016.

Thomson and her husband, Dr. Dawg’s chef chef, have been running in the restaurant since they were teenagers.

“It’s one of the industries where once you’re inside, you can’t get out,” Thomson laughed.
