Recover from a hearty holiday meal with ramen, garlic immunity broth, and tortilla soup with salty cheese.

Happy new year! I hope that everyone has been able to find an ounce of rest and rest during the last two weeks of the year. Like the wizard Gandalf in Peter Jackson’s “The Two Towers,” “I moved away from the idea and from time. The stars were rolling over my head and each day was as long as an age of life on Earth. (Yes, I rewatched the “Lord of the Rings” trilogy over the holidays. )
But here we are on the other side of January 1st, and genuine life is about to rear its ugly head. As much as I enjoyed cookies eaten with (and for) almost every meal, I needed a reset after the holidays. I made a mini round of vegetarian and vegan soups that were satisfying and fortified, and all the better for the upcoming bloodless front.
A hot bowl of noodles and broth actually makes a splash when the Mercury falls. There’s a ton of ramen. that I’ve put on my “must see” list since it opened this summer. . . (Not exactly the most productive time of year for ramen. )
Believe me when I tell you that you will probably not miss the meat. I literally continued to say: “I don’t miss the meat”, while listening to the interpretation of a rich Tonkotsu Ramen crowned with curly fungi and swimming with thick and chewable noodles. The secret are large amounts of oil (avocado and a mysterious “home flavor oil”) and a generous dose of soy sauce. The best thing is that this little sexy position means that it is easy to enter and grab a table; I can’t wait to return as soon as possible.
